Bored of regular Apple Pie? Try this Cinnamon Apple Cake for a change. Make sure to enjoy with vanilla ice cream and some drizzled caramel on top.
Yields1 Serving
The cake:
1 ¼ cups Plain flower
2 tsp Baking powder
1 tsp Baking soda
¾ cup Caster sugar
2 Large apples, peeled and roughly chopped
2 Large eggs, room temperature
1 tsp Vanilla extract*
½ cup Vegetable oil
¾ cup Plain yogurt
½ cup Walnuts roughly chopped (optional)
Cinnamon topping:
½ cup Caster sugar
1 tsp Cinnamon powder
1 tsp Unsalted butter, melted
Let's make it:
1Preheat oven to 350°F or 180°C.
2Grease and line a 9-inch round cake tin with parchment paper.
3In a large bowl, add flour, baking powder, baking soda and sugar. Add chopped apples and stir gently to combine.
4In a separate bowl, whisk together eggs, vanilla, plain yogurt and oil.
5Add wet ingredients to dry ingredients and gently, with a spatula, mix only to combine. Add batter into the already prepared cake tin.
Now let's prepare the cinnamon topping:
6Mix together cinnamon, sugar and butter until lumpy and wet.
7Sprinkle over cake batter and add walnuts.
And let's bake it:
8Bake for approximately 25-30 minutes or until a skewer inserted into the middle comes out clean.
9Let cake cool completely before slicing.

* You can use ½ tsp of vanilla powder instead.
